Basic Green Juice

This simple basic go-to recipe for ‘green juice’ will have you hydrated, alkalized and energized in the morning. Extra lemon and ginger can be added, according to your personal preferences.

Ingredients:
  • 2 cucumbers
  • 2 stems of greens or celery
  • 1 green apple or pear
  • 1/2 lemon
  • 1/2 inch knob of ginger, peeled
Instructions:

Run all ingredients through a juicer. Strain through a nut milk bag or cheesecloth for extra-smooth juice. Enjoy immediately. Store any leftovers in an airtight container in the refrigerator and consume as soon as possible.

Note: If not using organic produce, peel first before juicing.

  • Thanks for the recipe…I’m semi-new to juicing and wondering what is the actual veg equivalent of the 2 stems of kale and 1 carrot or beet? Meaning is drinking this juice the nutritional equivalent of actually eating two kale stems and a carrot or beet? Sorry if this is a silly question!

    • Hi Mistress of Spices! No silly questions here! 😉 Well, by juicing and drinking the produce (kale, carrots, beets, etc.), you will be missing out on a lot of the fiber, which is what gets left behind in the juicer. Also, depending on the juicer, there may still be some juice that was not pressed out of the fiber/pulp of the produce, which would contain additional nutrients, vitamins, etc. Generally-speaking, the more expensive, masticating juicers will extract more of the juice from the vegetables than the less expensive, centrifugal juicers. Although juicing is great, it is best to continue (or start, if you do not already do so!) to consume whole fruits and veggies plain, in a salad, or even blended in smoothies to ensure that you are consuming enough fiber and are getting all that you can from the produce, nutritionally-speaking. I do think that juicing is great, though, especially for people who do not eat many fruits or vegetables for whatever reason. Balance is key – mix things up and enjoy fresh produce in different ways! 😀
