‘Açai superfood bowls’ are apparently native to Brazil, where the açai berry palm thrives. However, in recent years, the açai superfood bowl phenomenon has spread to the US, and it is a popular menu item at healthy cafés. What is essentially a smoothie in a bowl is created by blending the fruit and combining it with other nutrient-dense, plant-based ingredients. Depending on where you live, you may be able to find frozen açai pulp at your grocery or health food store, but for those of us without access to the frozen fruit concentrate, a similar superfood treat can be achieved using açai powder and frozen bananas or even young coconut meat.
Ingredients:
2 large bananas, ripened
2 tbs açai powder*
½ cup coconut milk or nut milk
¼ tsp lemon juice (optional)
Pinch Himalayan or sea salt (optional)
¼-½ cup filtered water, if/as needed to blend
Instructions:
Peel the bananas, chop and freeze overnight. Place the frozen bananas, açai powder, coconut or nut milk, lemon juice and salt (if using) into a high-speed blender and blend until smooth, adding additional filtered water only if needed. Consistency should be thinner than ice cream but thicker than a typical smoothie. Pour into a bowl, top with desired toppings (see suggestions below) and serve with a spoon. Enjoy immediately. Serves 2.
