Simple Strawberry Smoothie

This is a very quick and easy strawberry smoothie to make any time of the day, and is palatable to both children and adults alike. I definitely prefer to use frozen berries, as the end result is a cold, creamy smoothie, but if you don’t have a very strong blender, feel free to use fresh (unfrozen) fruit. Strawberries are still in season here in Cyprus (my new home), so it’s a great time to stash some away in the freezer for later this summer when the prices are otherwise quite high. Ingredients:

2 cups frozen strawberries

2 cups coconut milk or other plant-based milk

4 dates, pits removed

Scrapings from ½ vanilla bean, or 1 tsp. non-alcoholic vanilla extract

Pinch Himalayan or sea salt

Instructions:

Place all ingredients except the liquid into a high-speed blender and blend until creamy. If your blender is struggling, let the strawberries thaw a bit, or add some filtered water in small amounts while blending. Pour into two glasses and top with a fresh berry or two, mint leaves, chia seeds or even chopped cacao nibs to serve. Enjoy immediately. Serves 2.
