Thai Lime Energy Balls

Lime is such a refreshing flavor, and I can’t get enough of it when it is paired with coconut. Medjool dates will produce the best results due to their soft texture and sweet, almost caramel taste, but if you can’t find or afford them, use the softest and sweetest dates you can find. These lime energy balls are great to grab and go when you need a pick-me-up, and are an easy treat to put in a child’s lunchbox.

Ingredients: 

1/3 cup raw macadamia nuts (unroasted, unsalted)

1 cup medjool dates, pits removed

2 tbs. lime juice

2 tbs. cold-pressed coconut oil

1-2 tbs liquid sweetener (e.g., raw agave, maple syrup, palm syrup)

½ tsp non-alcoholic vanilla extract or a pinch of vanilla bean powder

Pinch Himalayan or sea salt

Shredded coconut for rolling

Instructions:

Place all items except the shredded coconut into a food processor fitted with the “S” blade and process until well-mixed, stopping to scrape down the sides of the processor if necessary. Form into tablespoon-sized balls and roll in shredded coconut. Keep refrigerated until ready to serve. Will last for approx. 1 week.
